- 1000 grams firm, ripe tomatoes, quartered
- 10 grams salt
- 200 grams Spiced Vinegar
- 170 grams sugar
- 1/5 teaspoon pepper

1. Add tomatoes, vinegar and salt to thermomix bowl. Cook at 100 degrees for 30 mins, speed 1, no MC but put TM basket on top of lid to prevent splatter (This step is to preserve the colour of the tomatoes so you have a lovely red sauce, not a pink one!)
2. Blend on speed 4 for 10 seconds.
3. Add sugar and pepper and cook for further 30 mins, 100 degrees, speed 1, no MC but with TM basket on top again.
4. Scrape down sides of bowl and continue to cook for 20 minutes on varoma (TM31) or 120 degrees (TM5) speed 1.
5. Puree for 60 seconds/speed 9 (turning dial slowly up to speed 9)
Tip
It may be quicker or take longer, depending on the consistency you prefer. Cook for longer for a thicker sauce.

Delicious!
I made this tonight with my home grown tomato's (1220g's). I didn't have spiced vinegar (I'd never heard of it), so I used apple cider vinegar instead and it is delicious! No other changes to the recipe however
I did strain the seeds out after it was finished and it's a really lovely tomato sauce/ketcup. I will definitely make it again.
Delicious. Mum altered the ingredients slightly.

I have secretly changed from shop bought tomato sauce to this one and my kids are none the wiser, other sauces I have tried they have noticed the different taste. Thank you.
This sauce is delicious and lovely and red in colour, it made a perfect 700gm bottle of sauce. Thankyou for sharing.
Taste delishes, kept boiling over and I had to drop the temp to 105. Do you know how long it will last unused ?
