Ingredients
Beetroot, pear & feta salad
- 400 g Beetroot, peeled & quartered
- parsley, handful
- 1 clove garlic
- 50 g olive oil
- 1 tbsp seeded mustard
- 1 lemon, juice only
- 100 g rocket
- 1 Pear, thinly sliced
- 200 g feta cheese

- 1. Fill TM bowl with 700ml water. Place beetroot in steamer basket, steam for 25mins/Varoma/Speed 3 or until tender. Set aside to cool.
2. Place parsley & garlic in bow, chop 3secs/speed 8.
3. Add oil, mustard, vinegar and lemon juice, mix 5secs/speed 4.
4. Add rocket, beetroot & pear, mix 15secs/reverse speed 1.
5. Transfer to large serving plate & garnish with crumbled feta.

Very nice and relatively quick way to prepare a beetroot dish. Our beetroot took 30 minutes to become tender. I added currants to and topped with toasted cashews along with the feta. Delicious. I've also made a similar recipe using apple cider vinegar instead of lemon juice which also works well. Thank you very much for the recipe.
