Ingredients

Pasta Salad

  • 350 g dried falfalle
  • 6 cm lemon rind
  • 1 cloves garlic
  • 1 handful basil
  • 1 tbsp capers
  • 100 g pitted kalamata olives
  • 60 g olive oil
  • 1 lemon, juice only
  • 4 truss tomatoes, diced
  • 4 mozzarella balls, cut into 1cm cubes

Recipe's preparation

  1. 1. Cook pasta according to package instructions. Drain and set aside to cool.
    2. Meanwhile, place lemon rind in TM bowl, chop 10sec/speed 8.
    3. Add garlic, chop 5secs/speed 5. Scrape down sides.
    4. Add basil, capers and olives, chop for further 10secs/speed 6. Scrape down sides.
    5. Add olive oil, lemon juice, salt to taste, mix 5sec/reverse speed 3.
    6. Add tomato and mozzarella, mix 10sec/reverse speed 1. Place mixture in a large bowl and gently mix through pasta.

Tip

Mozzarella can be replaced with bocconcini.
