Soup
- 1 sprigg rosemary, leaves only
- 250 grams pumpkin, diced
- 250 grams sweet potato, diced
- 2 carrots, cut into 1 inch pieces
- 2 cloves garlic, peeled
- pinch salt, I use Himalayan pink
- 1 heaped teaspoon Vegetable stock paste
- 500 grams water
- 100-200 grams coconut cream or dairy cream
- evoo to roast vegetables in

Pre-heat oven to 180° while you chop the veggies
place veggies, garlic & rosemary into baking dish & coat well in evoo & roast 25-30min. Different ovens may vary, so adjust time if required
Transfer roasted veggies into Thermomix bowl, chop 10sec sp5
Add stock paste, salt (& pepper if you like) to taste, water & coconut cream & cook 10min 100° sp3
Once 10min is up, purée the veggies by **gradually** taking the speed up to sp10 for 1min until silky - MC on!
Garnish with a drop of coconut cream & coriander if you like & serve with bread rolls or my fav - Pizza Bianca.
Tip
If you don't want to roast the veggies, you can steam them in the varoma or cook them in the basket, but the taste won't be as intense.
Will be Paleo if you use coconut cream instead of dairy cream

I had cooked some roast veg (carrot, pumpkin & potatos) that I picked up from my local supermarket for $1.50 & wasnt really sure what to do with it (couldnt pass up the bargin )
I used this recipe as a guide using the above veg, long life cream because thats all I had & everything else as per recipe - pretty sure its the best soup I have ever had!! Amazing. Thanks so much
