Ingredients
Frittata
- 2 bunches asparagus, Ends trimmed
- 1/4 red capsicum sliced
- 4 eggs
- 2 egg whites
- 10 grams cream
- 1 teaspoon Dijon mustard
- salt and pepper to taste
To serve
- 1 Large tomato quartered
- 8 slices zuchinni
- 1 Handful baby spinach
- chia seeds (optional)
- salt and pepper to taste

Quarter your tomato and place in varoma dish along with slices of zuchinni
Insert tray and line with damp baking paper ( enough so eggs do not run out )
Lay asparagus and capsicum to your liking and set aside.
Place into TM bowl your eggs, egg whites, cream, Dijon mustard and salt an pepper. Insert butterfly 10 secs / speed 4 . Check that all ingredients are mixed well if not repeat .
Pour egg mixture into varoma tray over asparagus .
Rinse bowl and add 500 gms water . Place varoma into position and steam for 15 mins/ varoma / speed2.
In the last two minutes add spinach if you wish to cook or simply serve tomato on top to wilt .
Once on plate sprinkle with chia seeds for extra goodness
Serve with or with out toast
Tip
You can add many variations. Adding tamari to egg mix for flavour or mushrooms to veges . Adding a sauce to serve . Endless really
For me it highlighted my fresh asparagus

Delicious - the texture of the eggs was like silk. I didn't have any zucchini or capsicum - replaced with slices of left over new potatoes instead. Will definitely make this again.
