Ingredients

Zucchini slice

  • 2 portions Zucchinis
  • 1 portions onion
  • 1 carrot
  • 0.5 red capsicum, deseeded
  • 2 clove garlic
  • 80 grams Coconut Flour
  • 50 grams coconut oil
  • salt, to taste
  • pepper, ground, to taste
  • 1 level teaspoons Baking Powder, gluten free
  • 6 eggs
  • 50 g peas, baby, frozen
  • 100 g feta cheese
  • 100 g Parmesan cheese
  • 1 spring onion

Recipe's preparation

  1. paleo - if you sub out the cheese
    Keto - if you keep the cheese
    Gluten free
  2. Heat oven to 180 deg C
    Grease muffin trays.
    (I like to use the muffin bar tins from Kmart. Perfect for a grab and go brekky or lunch.
  3. Put zucchini, capsicum and carrot in bowl Closed lid"Closed lid" chop three seconds speed five.
    Place in steamer basket to allow fluid to drain from zucchini. Give it a squeeze after a few mins to get excess liquid out.
  4. Put onion garlic and bacon in bowl Closed lid"Closed lid" chop three seconds speed five.
  5. Closed lid"Closed lid" Add coconut oil. Heat three minutes, temperature varoma, speed three. No MC.
  6. Add in reserved zucchini, capsicum & carrot.
    Add coconut flour, coconut oil, baking powder, eggs and cheese (if using) or nutritional yeast (for dairy free substitute).
    Mix 6 seconds, reverse speed 3.
  7. Scrape down bowl. Add peas, and feta, mix 6 seconds, Counter-clockwise operation"Counter-clockwise operation" reverse, speed 3.
  8. Pour into 12 muffin tins. Sprinkle the top with additional Parmesan or nutritional yeast and ribbons of zucchini Place into oven and immediately drop the temp to 150 deg C
    Ready in about 10 mins or when brown on the top.

    Fab as Keto muffins , tolerates substitutions if you don't have enough zucchini. I reduce carrot, zucchini capsicum chopping by a second, same for onion, bacon, garlic to get a chunkier texture . Keeps well in fridge
