Ingredients
- 75 g parmesan, cheese
- 175 g Cheddar, cheese
- 1 onion
- 1 clove garlic
- 2 tsp herbs, basil, oregano, sage, thyme, rosemary
- 350 g zucchini, Approx 1 sm-med zucchini
- 200 g carrot, approx 2 med carrots
- 50 g oil, olive
- 4 eggs, large or 5 small
- 200 g diced bacon or ham
- 175 g SR flour
- to taste salt & pepper

Put cheeses into bowl 7 sec/sp 10.
Set aside & keep 100 grams reserved for topping.
Put onion, herbs, garlic into bowl 2sec/sp 8
set aside.
Put zucchini & carrot into bowl 10sec/sp4 or until small pieces.
Add all other ingredients except reserved cheese. 20sec/"Counter-clockwise operation" /sp4 or until combined.
Put sheet of baking paper into baking tray and scrape mixture onto baking paper. Spread evenly over tray and sprinkle reserved cheese over the top. Bake for approx 45 mins 180C or until golden brown.

Tip
You could add a little chilli for a spicier taste, add different vegetables to use what you have on hand or different herbs to utilise what you have growing in your garden.

Slice the zucchini into rounds or strips. Dip into beaten egg and then flour or breadcrumbs and fry in a little oil or melted butter. Season with salt and pepper and remove to paper towel when golden to drain off the excess oil. Do Write My Paper & You can season the flour with extra spices for example salt, pepper, garlic powder, onion powder, chili powder, oregano, basil, or any desired herbs before dipping zucchini into it. Just a guide to give you some ideas.
Love this recipe a winner. I have printed and added at the beginning to chuck my bacon rashers in to dice them, to save me hand chopping when I get to that part in the recipe. Just a note for others to perhaps do that first before you grate your cheese. My 8year daughter also enjoyed these!
Hi - I made these yesterday and they were a bit gooey in the middle. The outside was crusty though...would I just need to cook them for longer? The flavours were delicious and will definitely try making again. Thanks
