Ingredients
Lemon Loaf
- 1 lemon, peel with vege peeler
- 100 g Butter, cut into pieces
- 160 g raw sugar
- 2 eggs
- 290 g plain flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 135 g Milk
- juice of 1 lemon
- 60 g white sugar, extra for topping

Preheat oven to 180C
Line a loaf tin
Place lemon peel and sugar in bowl and chop 3 sec / speed 9
Add butter and eggs and mix for 2 min / speed 4
Scrape sides down with spatula and mix for further 10 sec /speed 4
Add flour, baking powder, salt & milk and mix 10 sec / speed3
Scrape sides down and do for further 5 sec / speed 3 if required
Spoon into pan and cook for 1 hour
Meanwhile stir together lemon juice & extra sugar
When loaf is cooked pour over lemon juice mixture. Cool loaf in tin

Delicious
Enjoyed this. The lemon flavour was subtle in my loaf so I'll use 2 lemons next time or a larger one.
This was lovely! Nice and moist with a yummy zing! Whole family loved it. And so easy.
