- 1 1/2 teaspoons Yeast
- 2 teaspoons castor sugar
- 280 grams warm water
- 1 teaspoon salt
- 480 grams bakers flour
- 1 teaspoon bread improver
- 1 tablespoon olive oil
- 1 egg, Lightly Beaten
- Grated Tasty Cheese
- Diced bacon pieces

- Place yeast, sugar and warm water in the bowl
20 sec / speed 4
Add salt, flour, bread improver and oil
5 sec / speed 7 then
3 min / "Dough mode" kneed
Transfer into lightly oiled bowl and cover with cling wrap
Leave to prove for approx 1 hr or until mixture has almost tripled in size.
Work the dough into 6- 12
rolls and place on a lined tray, almost touching
Pre Heat Oven to 180 degrees Fan Forced
Leave rolls to prove for a further 30 minutes or until doubled in size
Score top of roll with a sharp knife
Brush with egg wash. Top with cheese and then bacon.
Bake for 15 - 20 minutes until golden
Brush with melted butter once cooked
Enjoy!
Tip
To score the top of the rolls - use a sharp knife and cut across the top of the roll.

This is a fantastic recipe. So so much cheaper to make than buy, and they taste better than supermarket bakery options. I make batches and freeze. Take out for the lunchbox the night before in winter. I'm tempted to try this recipe for finger buns too.

I love this dough recipe! I use it for Ook ook all the time!
Always turn out perfectly, I mix the toppings up a bit, this time I have 4 x cheese & bacon, 5 with just cheese and the other 3 were caramelised onion & cheese (I caramelised some onion and then laid out the dough, and spread onto dough and then formed a ball, I did place cheese on top but must have been after the pre oven pic) I just had one for lunch, 24hrs after baking and they are still just as good as yesterday.
I use the yeast that has the bread improver already included. I also weigh the total dough and divide by 12, each roll was 68gms

Hi mine were only small, like scones followed the recipe. I couldn't get the rolls to prove further. It doesn't say anywhere in the recipe to turn off the oven once you pre Heat. It did feel all wrong at the time but I followed your steps. I feel this is an important step that probably would of made the difference. I will try it again.
It was difficult to keep the cheese and bacon on. What did I do wrong? I used all fresh ingredients in date Thank you
I cooked These for the first time and the dough didn't prove or rise? I used 1.5 teaspoons of dry yeast and no improver would that have caused it?
Delicious, in my opinion better than bakers delights rolls, teenage son asks quiet regularly for these
You sooo don't need me to tell you how amazing these are!! Never have I been able to make bread that is even half decent... until today!! Yum is the only word I can use to describe these! 👏 You are 1 very clever lady!! I've procrastinated for so long over these but today was the day!
Next ones I'll be trying GF using Caputo GF flour. If they work out even half as good as this we'll have a GF game changer on our hands!!

Aptly Named Rolls!
I have my granddaughters over from Ireland and have been introducing them to the wonders of baking with the Thermomix. This was one of the first things they wanted to bake as they always enjoyed the cheese & bacon scrolls from BD whenever they were in Australia.
They were certainly not disappointed when they tried this recipe.
The scrolls rose beautifully, were crispy on the outside and soft and fluffy on the inside.
