Burgers Bellissimo
- 1 large red capsicum
- 1 kilogram lean beef
- clove garlic
- 1 small white onion (80g)
- 35 grams drained sundried tomatoes
- 2 tablespoons sundried tomato pesto
- 1 large red onion sliced
- 2 large (500g) tomatoes, sliced thickly
- 8 bread rolls
Avocado Dressing
- 1 medium avocado (250g)
- 80 grams buttermilk
- 1 tablespoon lemon juice

Roast capsicum on bar-b-q or under grill until the skin blisters and blackens. Place in plastic bag to cool slightly before peeling away and discarding the skin
Mince beef in four batches by placing in closed lid position and turbo 3-4 times. Set aside
Place peeled capsicum, sundried tomatoes, garlic, onion and sundried tomato pesto into the TM bowl and mix for 5 seconds on speed 7. Scrape down the sides of the bowl and repeat forming a smooth paste
Add beef and mix for 20 seconds, reverse, speed 4.
Stir and repeat if necessary
Divide and shape the mixture into 8 patties, cover and chill for 30 minutes.
To make dressing
Place avocado, buttermilk and lemon juice in TM bowl and mix for 5 seconds on speed 7.
Scrape down the sides and mix for a further 20 seconds on speed 5 until smooth
Cook patties on barbecue, along with onions and tomato slices
Split rolls and spread bases with Avocado dressing, top with mesculin, patties, tomato slices and onion. Drizzle burgers with remaining dressing

Quick and easy and I really like the combination of flavours, especially the meat patties. I didn't have sundried tomato pesto so used some harissa I had in the freezer instead.
