- 200 gram Shortcut Bacon, roughly chopped
- 1 onion, halved
- 1 clove garlic
- 20 grams oil
- 1/2 red capsicum, sliced
- 2 Tomatoes, Halved
- 1 tablespoon tomato paste
- 400 gram Tin Pineapple pieces, in natural juice, including juice
- 1 heaped teaspoon EDC Chicken Stock Concentrate
- 200 grams coconut milk
- 3 tablespoons Corn Flour

Place Onion and Garlic in TM Bowl and chop 3 seconds / speed 7
Add Bacon and chop 3 seconds / speed 5
Add oil and saute 3 minutes / varoma / speed 1
Add tomatoes and chop 3 seconds / speed 4
Add remaining ingredients and cook 17 minutes / 100 degrees / "Counter-clockwise operation" / speed soft "Gentle stir setting"
Tip
Serve with steamed rice or hokkein noodles.

I don't add the capsicum, because hubby can't eat it. Delicious dish!
I must admit this dish is not the prettiest to look at but it really tastes delicious and it's full of flavour. I used coconut cream. Next time I'm going to hand chop the bacon and add as is. Thanks for sharing a yummy recipe.

Yummy! Made this tonight! I used chicken thighs cut in half, using reverse to keep them as thighs and halved some mixed mini tomatoes. I think next time I won't chop the bacon as much. Nom nom nom. Cheers Amy
