Ingredients

Spice Mix

  • 1/2 stick Cinammon
  • 1 teaspoon turmeric
  • 2 teaspoon garam marsala
  • 1/2 teaspoon Caynne Pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cardamon
  • 1 bay leaf
  • 2 teaspoon sweet paprika

Chicken

  • 500 grams chicken, 3cm cubes
  • 200 grams natural yogurt

Sauce

  • 3 cloves garlic
  • 5 grams fresh ginger
  • 1 onion, halved
  • 40 grams Butter
  • 20 grams Olive Oli
  • 400 grams tomatos, diced
  • 70 grams water
  • 25 grams tomato paste
  • 1/2 lime, juiced
  • 1 teaspoon vegetable stock
  • 4 tablespoon cornflour
  • 4 tablespoon water

Recipe's preparation

    Spice Mix
  1. Add all ingredients and dry fry at 5minutes/100°C/speed 1

    Allow to cool

  2. Once cool mill 30seconds/speed 10

    (go again until a powder)
  3. Chicken
  4. Place Chicken, Spice mix and Natural yogurt in a separate bowl and mix all together. Then place in fridge for about 5 hours (overnight is better).
  5. Sauce
  6. Add Garlic, Ginger and Onion and chop 3secs/ speed7,scrape down sides.
  7. Add Butter and Oil sauté 3mins/Varoma/speed 1,scrape down sides.
  8. Add Diced Tomatoes and 70g Water and puree 30secs/speed 8.
  9. (Insert Butterfly)Add Tomato Paste, Lime Juice, Stock and Chicken mix and cook 16mins/100°C/Counter-clockwise operation"Counter-clockwise operation" /speed 1.
  10. Mix Corn flour with Water add to bowl and cook for a further 4mins/100°C/Counter-clockwise operation"Counter-clockwise operation" /speed 1.After cooked put in Thermoserver.

Tip

Can use less Cayenne Pepper if you don't like it as hot or add more if you want it hotter, this one has a little bite but won’t burn as the chicken in marinated in the yogurt it helps a lot.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
