Ingredients
Lamb Shanks with mixed vegetable sauce
- 1 level tsp salt
- 1 Lemon peel, use peeler to remove peel
- 1 onion
- 2 cloves garlic
- 30 g olive oil
- 6 lamb shank
- to taste pepper, ground
- to taste paprika
- to taste cayenne pepper
- 2 bay leaves
- 1 level teaspoons rosemary, dried
- 400 can tomatoes
- 4 fresh mushrooms, cut in half
- 1 carrot, cut into 3 cm pieces
- 1 zucchini, cut into 3cm pieces
- 1/2 red capsicum, cut into 5 cm pieces
- 300 g liquid stock, vegetable, beef is a great option too

- Put lemon peel and salt in bowl, mill for 10 seconds speed 10. Scape down and repeat. Scrap into large casserole or large slowcooker
- Put onion and garlic in TM bowl, chop 4 seconds speed 5. Scrape down sides, add oil. Cook for 5 minutes, varoma, speed 1
- Meanwhile, put lamb shanks in large casserole or slow cooker. Season with pepper, cayene pepper, paprika. Add bay leaves, rosemary and tomatoes.
- Once onion is sauted, add mushrooms, carrot, zucchini and capsicum to the TM bowl, chop speed 4.5 for about 5 seconds, add to lamb. Add stock to the TM bowl and turn on for 20 seconds speed 10 (to essentially clean the bowl) and add to lamb.
- Cook for 8 hours on low or 70 degrees in the oven (covered with foil) turn and stir each hour. In the last 30 minutes of cooking, removed most of the liquid into your TM bowl. Blend on speed 10 for 1 minute. Return to lamb to complete and adjust seasoning as needed.
- Serve with your favourite mash and steamed greens
