- 120 grams red lentils thoroughly washed and drained
- 400 grams tomatoes, canned or fresh
- 1 heaped tablespoon TM veg stock
- basil parsley salt pepper to taste

I made this yesterday and although it was delicious and everyone ate it, I found that I needed to add about 250ml of water during cooking as it became very thick as the lentils cooked
"Closed lid" Delicious! And so much goodness in one dish! I like cooking it for an extra 10 minutes. And also added extra tomato paste.
Yum! Added a sprinkle of dried thyme and oregano as well as a squeeze of tomato paste in step 2
