Ingredients

Patties

  • 600 g pumpkin, cut into cubes
  • 1 onion, cut in half
  • 3 cloves garlic
  • 1 heaped tablespoon cummin powder
  • 50 g Roasted Cashews
  • 150 g brown lentils, (they call them green lentils for some reason)
  • 8 sprigs parsley, a handful
  • 150 g breadcrumbs
  • 1 tablespoon tahini
  • 2 eggs
  • salt and pepper to taste
  • olive oil for frying

Garnish

  • 1 avocado, sliced
  • beetroot relish
  • sour cream
  • Lettuce, Leaves

Bun

  • turkish or foccacia, the Italian Onion Bread from My Way of Cooking is perfect

Recipe's preparation

    Cook lentils and pumpkin (takes 30 mins)
  1. Place 1 litre of water in the Thermomix bowl and place lentils in the basket. Place the pumpkin in the Varoma. Cook for 30 mins at Varoma temperature speed 2.

    Tip water out before continuing with next step.

  2. Place onions, garlic, parsley and cashews into bowl and chop speed 7 for 6 seconds.

  3. Mix all ingredients together on speed 5 for 20 seconds (or until they are all mixed together)

  4. Heat frypan and drop large spoonfuls onto the pan and flatten into patties. Cook until golden brown and warmed through. Serve with turkish bread (or make some Italian Onion Bread from My Way of Cooking - too easy) sour cream, avocado, some lettuce and beetroot relish.

Tip

To get a consistant size and shape use a measuring cup to scoop out the mix (wet it first so the mix doesn't stick)

    Thanks for the tips I've adjusted the recipe to note that the lentil water needs to be tipped out and added a little extra time for the mixing.

    Yummo! These were so nice and the family loved them. I was unsure if I should tip the water out after cooking the lentils. I tipped it out and I'm glad I did. Maybe the previous comment about them being too runny was because of the water was left in.

    Great way to use up pumpkin. Ran out of cashews so I used almonds instead. Needed to mix all ingredients for much longer than 10 sec.They held together quite well after frying them up. I really enjooyed them with sweet chilli sauce and plain yohghurt! Yum.

    Hi Kezbaby86 I use dried lentils but you could use canned - probably don't need to cook them if they are soft already

    Fantastic taste!   I didn't have any cashews but that didn't matter. Next time a double batch and I'll freeze some for snacks.
