Ingredients

EGGS

  • 12 small eggs, 40g petit eggs
  • 20g olive oil
  • 1 Brown Onion Halved
  • 2 cloves garlic
  • 2 carrots peeled and chopped, 200g
  • 1 red capsicum, 140g
  • 2tsp sumac
  • Salt and pepper
  • 20g EDC Dukkah
  • 2cans chickpeas, rinsed, drained
  • 25g Chia

yoghurt dip

  • 100g natural yoghurt
  • 1small bunch mint

Recipe's preparation

    eggs
  1. cook as per edc 12 small eggs fit in basket 8mins


    peel and cool


     


     

  2. place onion,carrot,capsicum and garlic in bowl chop 3secs speed 5 scrape down


     


    add olive oil and sumac cook 5mins veroma speed 2


     


    add chickpeas and chia and chop 10sec/speed7


     


    Allow to cool


     

  3. divide mix into 12 even balls


     


    flatten out in your hand and place one egg in and encase egg with


    chickpea mix


    spread out dikkah and roll each ball in dukkah and place in fridge


    for two hours


     


    place into pre heated oven to cook i did for 30mins then put grill on and browned a little ,im watching my weight if your not to worried you could pan fry in oil of your choice ,would make outside crunchy


     

  4. place yoghurt and mint in bowl and chop 20secs speed 9


    chill serve with eggs can be serve hot or cold

    THESE ARE THE BOMB!!!
    I used 6 large egg though (only because I couldnt be naffed going to the shop). When I flattened out the mix to wrap the egg in I put a smear of hot English mustard on before wrapping them like my old mum used to do. Great source of protein for us vegos. I didnt have sumac but tasted great anyway!! Ive also tried them the old way-dipping in beaten egg and breadcrumbs, deep fried YUM.
    A recipe ive laminated as I use it heaps.
