Ingredients

Guacamole and cheese

  • 250 g cheese, cut into 3-4 cm cubes
  • 2 Avocados, flesh only
  • 1 tbsp Sweet chilli sauce
  • 1/4 piece Lemon Juiced
  • 80 g Greek yogurt or cottage cheese, plus extra to serve
  • pinch pepper to taste

Bean Mix

  • 2 cloves garlic
  • 1 large chilli, quartered
  • 1 onion large, quartered
  • 1 RED CAPSICUM, deseeded and cut into eight pieces
  • 15 g oil
  • 1 tsp cumin, ground, (mill in TM first if using seeds)
  • 1 tsp coriander seeds, ground, (mill in TM first if using seeds)
  • 1/2 tsp chilli flakes, dried
  • 1/2 tsp hot ground chilli, (optional for a bit more kick)
  • 1 can Whole peeled tomatoes or 4 fresh (very ripe) roma tomatoes halved, (about 400g)
  • 4 X 400 g cans of BEANS, eg. 1 x KIDNEY, 1 x CANNELLINI, 1 x BLACK and 1 x PINTO
  • 10 g tomato paste
  • 1 pinch pepper to taste

Recipe's preparation

    Guacamole and cheese
  1. Grate cheese 4 secs / speed 4, set aside and repeat till you have enough cheese for you liking on nachos.

  2. Place remainder of Guacamole ingredients in TM bowl and mix 3 sec / Counter-clockwise operation"Counter-clockwise operation" / speed 5. You can also crush these in a bowl with a fork while your Bean Mix is cooking if you prefer. Set aside, wash and dry bowl.

  4. Mince GARLIC and CHILLI 3 sec / speed 7

  5. Add ONION and CAPSICUM and chop 4 sec / speed 5, scrape down.

  6. Add GROUND CUMIN, GROUND CORIANDER SEEDS and OIL and sauté 3 mins / VAROMA / speed 1

  7. Add CHILLI FLAKES, GROUND CHILLI (optional) and TOMATOES. Blend 5 sec / speed 3.5 (this speed will stop the tomatoes going orange but hold on to your TM as it can wobble)

  8. Insert Butterfly, drain and rinse your selection of beans and add BEANS to TM bowl. Add TOMATO PASTE and PEPPER. Cook 15 mins / 100 degrees /Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" . With Measuring Cup (MC) in place. During this time you can make your Guacamole with a fork, or, if you made it in you TM before you can relax!

  9. Remove MC, place the RICE BASKET on top of the lid to stop spalatters and cook 7 mins 30 / VAROMA / Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" .

  10. Serve over corn chips, sprinkle on cheese and bake in oven or grill till cheese is melted. Top with Guacamole TOPPING, yoghurt  and enjoy with a bottle of cerveza!

Tip

If you prefer, pour bean mix into Thermoserver to keep warm and cook rice in Thermomix as per your everyday cookbook. We also use this mix in tortillas and can freeze it. A big THANK YOU to Pete who perfected this 'every kinda bean we can find in the supermarket' dish while we were living in the States!
