Ingredients

Filling

  • 20 g French Shallots
  • 30 g olive oil
  • 100 g fennel, roughly sliced
  • 40 g orange juice
  • 300 g Raw Prawn Meat
  • 1 egg yolk
  • Himalayan salt, to taste
  • cracked pepper, to taste

Pasta

  • 3 large eggs
  • 20 g olive oil
  • 60 g tapiaco flour
  • 70 g cornflour
  • 40 g potato starch
  • 4 1/2 tsp Guar Gum
  • 3/4 tsp Himalayan salt
  • 1 egg white

Sauce

  • 1/2 onion
  • 30 g olive oil
  • 100 g fennel, thinly sliced
  • Himalayan salt, to taste
  • 60 g orange juice
  • 10 g cornflour
  • 250 g coconut cream
  • 150 g prawn meat
  • cracked pepper, to taste

Recipe's preparation

    Filling
  1. 1. Place shallots in Thermomix bowl and chop for 3 seconds / speed 7


    2. Add olive oil and saute for 1 minute / 100C / speed 2 with MC off


    3. Add slice fennel and cook for 5 minutes / 100C / speed 2


    4. Add orange juice and cook for 5 minutes / 100C / speed 2. Remove, set aside and allow to cool.


    5. Place prawn meat in Thermomix and mince for 5 seconds / speed 6


    6. Add fennel, salt, pepper and egg yolk and mix for 15 seconds / speed 2. Set aside


     

  2. Pasta
  3. 1. Place eggs and olive oil in Thermomix and blend for 5 seconds / speed 4


    2. Add tapioca, cornflour, potato starch, guar gum and salt and mix for 6 seconds / speed 3, then Closed liddough mode for 1 1/2 minutes


    3. Empty dough onto lightly floured surface and gently knead dough to form a ball.


    4. Cut dough into 3 sections. Take the 1st section, pat down with palm of hand, sprinkle with flour, and run through pasta machine on the thickest setting. Fold into thirds, turn dough so that the unfolded edge enters the pasta machine and repeat 3 more times. Then start reducing pasta sheet thickness until desired thickness is achieved. Repeat with all 3 sections


    5. Cut pasta dough into squares approximately 5 cm x 5 cm


    6. Line squares up and put a teaspoon of filling into the middle of half of the pasta squares. Brush the edges with the beaten egg white. Take a plain square and press edges together to secure filling.


    7. Boil a pot of salted water. Once boiling, carefully add all of the ravioli. Once water returns to the boil, cook for 5 - 6 minutes or until tender. Drain pasta (DO NOT RINSE)

  5. 1. Place Onion in Thermomix bowl and chop for 3 seconds / speed 7


    2. Add olive oil and sauté for 1 minute / 100C / speed 2 with MC off


    3. Add fennel and salt and cook for 5 minutes / 100C / counter-clockwise operationspeed 2


    4. Add orange juice and cook for 5 minutes / 100C / counter-clockwise operationspeed 2


    5. Add cornflour, coconut cream, prawn meat and pepper and cook for 5 minutes / 100C / counter-clockwise operation speed 2


    6. Pour sauce over cooked pasta and serve

Tip

Pasta - once kneaded, pasta will appear quite crumbly. Just tip out and knead into ball
