Ingredients

Potato bacon and leek soup

  • 60 grams Bacon slices
  • 20 grams olive oil
  • 1 leek
  • 1 onion
  • 1 garlic clove
  • 600 grams white potatoes
  • 600 grams water
  • 30 grams chicken or vegetable stock paste
  • cracked pepper
  • spring onions
  • 200 grams Cream or Sour Cream

Recipe's preparation

    Method
  1. Chop bacon into pieces and add to the bowl with the olive oil. 5 minutes, 100 degrees, speed 2, MC off.
    Add the leek, onion and garlic and chop for 5 seconds on speed 5. Scrape down the inside of the bowl and cook for 2 minutes 100 degrees, speed 2, MC off.
  2. Dice your potatoes small and add them to the bowl with the water, stock paste and cook for 20 minutes, 100 degrees, speed 1, Simmering basket on top.
  3. Check your potatoes are cooked through, if not, repeat the previous step for 5 minutes, or until cooked through.
  4. Once cooked, add the cream or sourcream, put your measuring cup into the mixer lid and set your time for 1 minute. No heat setting required. Start your mixer at speed 5 and gradually increase to speed 9 over the minute.
    I topped ours with some crispy bacon cooked in the airfryer. Chubby mixer 😋
