    Muffin Mixture
  1. Pre-heat the oven to 180 degrees


    Grate the parmesan for 5 secs /speed 9 (set aside)Dice all the veggies & herbs for 3 secs / speed 4 (or on a slower blade speed if you want them more chunky) - set asideAdd the eggs with salt & pepper & beat for 10 secs / speed 4Spoon the veggies & bacon bits into a 12 muffin trayPour in the egg mixture until 3/4 fill & sprinkle the cheese over the topBake for 15 mins or until the egg has set  

Tip

If you prefer you can add 50g of thickened cream & a sprinkle of paprika on the top!

    We loved these. I made them exactly to the recipe, but I cooked them in my K - Mart pie maker. They were delicious.
    Very popular with the men in the house.

    I changed this recipe lots! used 7 large duck eggs, 50gms cream, 1/4 onion, garlic, dried basil, and silver beet to fill bowl. put bacon and green stuff in muffin pan first and topped up with egg mixture and then 1/2 the parmesan and paprika. 12 good sized muffins. yummy!!
