Ingredients
Pastry
- 200 g plain flour
- 130 g Butter, Chilled, chopped
- 1/2 tsp salt
- 1 egg
Filling
- 70 g bacon, Diced
- 1 onion, Diced
- 1 apple, Peeled cored and thinly sliced
- 400 g Sauerkraut, Drained weight
- 1 bay leaf
- 150 g dry white wine
- 5 eggs
- 200ml cream
- 1/2 tsp caraway seeds
- 1/2 pinch Nutmeg
- 1/4 tsp pepper
- salt, To taste
- 100 g grated cheese
- crème fraiche, To serve, optional

- Pastry:
1. Add all ingredients to the "Closed lid" and combine briefly 5secs\sp4
2. Knead "Dough mode" 3mins. Tip onto a sheet of cling wrap, bring it together and then shape into a flat disc.
Place in the fridge for 30 minutes.
Filling:
1. Add a splash of olive oil to a frying pan and bring to med/high heat.
2. Add the bacon, onion and apple and caraway and cook for about 3-5 mins, until softened.
3. Add the sauerkraut, wine and bay leaf, bring to a simmer and cook for around 20mins, uncovered. Set aside to cool.
Heat the oven to 180°C regular oven.
Grease a 23-25cm deep pie/quiche dish.
4. Beat eggs, add the cream, nutmeg, S&P
5. Roll out the dough to fit the prepared dish.
6. Spread out the bacon mixture evenly, on top of the ( uncooked) base.
7. Gently pour the egg mixture over the top and sprinkle with cheese.
8. Bake for 30-35 until golden and set.
9. Serve with a dollop of (optional) crème fraiche.
