Ingredients

Pastry

  • 150 grams bakers flour
  • 75 grams Butter, chilled, cut into pieces
  • 1/2 tsp salt
  • 50 grams water, chilled

Filling

  • 1 brown onion, peeled and halved
  • 4 shortcut bacon rashers, roughly chopped
  • 50 grams baby spinach
  • 6-8 eggs

Recipe's preparation

    Pastry
  1. Place all ingredients into mixing bowl and mix 20sec/speed 4. scrape down sides of bowl and repeat if necessary.

  2. Transfer pastry onto thermomat and work into a flattened ball. Wrap in thermomat and refrigerate until needed.

  3. Filling
  4. Place onion and bacon in mixing bowl. Chop 3-5secs/speed 5. Scrape down sides of bowl with spatula and repeat if necessary. Saute bacon and onion 4 mins/12o degrees/speed 2. Remove from bowl and allow to cool.

  5. Assembly
  6. Roll out pastry to desired size (approx 1-2mm thickness) to cover bottom and sides of ceramic dish.

    Line ceramic dish with pastry.

  7. Place baby spinach leaves on top of pastry

  8. Spread cooled bacon and onion mix on top of baby spinach leaves

  9. Crack eggs on top of spinach, bacon and onion

  10. Fold edges of pastry over the top of filling

  11. Place in oven for 30 mins

  12. Once cooked remove from oven and serve hot or allow to cool and serve warm/cold

Tip

You can make another batch of pastry to form a lid for the pie (I would recomend puff pastry for the lid)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     The pie tasted very nice. However the eggs mostly slid off the pie and I only managed to fit four eggs. Maybe I had too much spinach? I think a little more pastry and a pastry lid with the pie would help solve this problem!

    The pastry is so easy and rolls out really well.  This pie looks very fancy too but simple to make.
