Ingredients

Mini quiche ingredients

  • 120 grams cheddar or tasty cheese, cubed
  • 375 grams zucchini, roughly chopped
  • 1 onion, large, quartered
  • 0.5 piece red capsicum, roughly chopped
  • 100 grams bacon, roughly chopped
  • 5 eggs
  • 150 grams Self Raising Flour
  • 55 grams olive oil
  • pinch salt to taste
  • pinch pepper to taste

Recipe's preparation

  1. Preheat oven to 180 degrees celcius.
     

     

    Cube cheddar cheese, place in the TM bowl and grate on 5 secs / speed 6.  Set aside.
     

    Place zucchini, onion, bacon and capsicum in the TM bowl and chop on speed 5 for 3-4 seconds. 
     

    Add 15g of olive oil and saute (4 min/Varoma/speed 1) Set aside in separate bowl.
     

    Add SR flour, 40g olive oil, eggs and salt/pepper to the TM bowl and mix on speed 4 for 20 seconds.
     

    Return cheese, zucchini, onion, bacon and capsicum to the TM bowl and combine all ingredients on speed 3 for 30-40 seconds on reverse.Counter-clockwise operation"Counter-clockwise operation"
     

    Pour mixture into the silicone mini muffin tray and bake in a pre-heated moderate oven for approximately 20 minutes or until golden brown.
     

    Serve warm or cold. These are great snacks for kids lunchboxes! Yum!

    Great recipe - thank you! And yes, easy to change the ingredients around. I didn't have tasty so used half parmesan and half mozzeralla cheese. I used carrot instead of zucchini and pancetta in place of bacon. I tore the pancetta up and just placed a piece in the middle of each portion before cooking.

    The recipe is generous, I filled the mini muffin trays a little too high, no more than two thirds would be ideal. In addition to the 12 mini miffins I got 6 regular muffin size muffins out of the mixture.

    Delicious!

    I didnt have any bacon or ham so I used some left over roast lamb that I had. It was very tasty, and was a perfect lunch for my toddler.
