Ingredients
Brownies
- 200 grams Raw Sweet Potato, Peeled & Chopped
- 125 grams coconut oil, Melted
- 1 tsp vanilla extract
- 170 grams Raw Honey, Maple Syrup or Coconut Sugar
- 2 Large --- eggs
- 1/2 Cup Cacao
- 2 tsp baking powder
- 1 tsp Bi Carb Soda
- 2 tbsp Coconut Flour
- 1 Handful Berries or Cherries, if desired

Preheat Oven 180 Degrees
Line or spray baking Tin
I use a muffin tray
Combine into the bowl Sweet Potato, Coconut Oil, Vanilla Extract, Honey (or Maple Syrup or Coconut Sugar) and Eggs
Blend on Speed 7 for 10 Seconds
Scrape down the sides of the Bowl
Add the following Cacao, Baking Powder, Bi Carb Soda and Coconut Flour
Blend on Speed 7 for 10 Seconds
Allow to sit for 5-10 Minutes
Pour Batter into linned or sprayed tin
Add Raspberries, Blueberries or Cherry's and slightly push in if desired
Bake for 25 minutes (may need longer)
Should be firm to touch or test with skewer
Cool and store in airtight container or freeze
Tip
Serve with fresh fruit, Yogurt, Coconut Cream
You can also add 1/2 Cup crushed Walnuts or 1/2 or if your after some bite add finely chopped Chilli.
I have also used 1/2 Cup of milled Dark Chocolate

Nice, made 4 of my large muffins. Used fresh mulberries & cacao nibs used 20g coconut sugar & 100g honey, was sweet enough. Used half cacao powder which was perfect. Jan 2021

I do a mix of 125g honey maple syrup, and added 10 drops of vanilla Stevia.
I used 1 macadamia pushed into the middle of each cupcake, the recipe makes a perfect 12 regular size cupcakes, 25min was perfect in my fan forced oven, may need longer in a pan.
I don't need icing like in the picture either, it's great as is and i love that they can be frozen for portion control, so I don't gobble them all!

These are soooo good, added the raspberries and used rice malt syrup. Everyone wanted more more so they didn't last long...

Forgot to mention I only added 120g in total of maple syrup and honey and it was plenty.

The best sweet potato brownies I have made! I used half coconut sugar/half maple syrup & reduced the total to 150g. Love it with the hidden raspberry inside! Fyi -1/2 cup cacao is 35g
