Ingredients

Shortcrust Pastry

  • 150g TM Butter - chopped
  • 300g plain flour
  • 1 pinch salt
  • 2 tablespoons cold water

Orange Butter

  • 180g fresh orange juice
  • 70g TM caster sugar
  • 10g cornflour
  • 3 egg yolks
  • 15g TM butter

Meringue

  • 3 egg whites
  • 150g TM caster sugar

Recipe's preparation

    Pastry
  1. Pre-heat oven to 200 degrees.

    Put the butter, flour and salt intoClosed lid"Closed lid" and chop speed 8 until it resembles breadcrumbs (about 8 secs).

    Turn speed down to 5 and add the water to form a dough.  Wrap in the thermomat and leave to rest in the fridge for 30 mins.

  2. Roll out dough and use cookie cutter to make rounds.  Put into the muffin tray and bake for about 12 mins until golden.

  3. Orange Butter
  4. Put the all the ingredients for the orange butter into the Closed lid"Closed lid" and cook 80 degrees, speed 3 for 10 mins.  Pour into a bowl to cool.

  5. Meringue
  6. Put the butterfly whisk into the Closed lid"Closed lid" and whisk egg white at 50 degrees, speed 4 for about 4 mins until thick.  Keep on speed 4 and slowly add in the caster sugar. 

  7. To Assemble
  8. Turn up oven to 220 degrees.

    Fill each pastry case with cooled orange butter and pipe on some meringue to cover.

    Bake for about 5mins until golden.

Tip

You can use lemon or lime butter instead ....

    Made these last night in mini muffin tin. I'm a TM newbie and finding it exciting trying all these new ideas! Brought my tarts to work today. My boss is an ex- chef. Takes a bit to impress... they were all gone in a blink with amazing comments! Will make more this weekend!!

    I made the orange juice for the curd too.  If you do this, there are 4 processes to do in the TMX!   Tasted great and went down very well.  Will try the lemon curd version too tmrc_emoticons.)
