Ingredients

Filling

  • 40 g plain flour
  • 1 sprig rosemary
  • 1 sprig Oregano
  • 1 sprig Thyme
  • 1 sprig parsley
  • 1 clove garlic, (peeled)
  • 1 brown onion, (peeled, cut in half)
  • 35 g Butter
  • 1 carrot, (peeled, cut into pieces)
  • 300 g water
  • 1 tablespoon vegetable stock concentrate, (heaped)
  • 500 g lamb mince
  • 80 g Frozen baby peas

Mash

  • 35 g Cheddar cheese, Cut into pieces
  • 35 g parmesan, Cut into pieces
  • 750 g potatoes, Peeled, cut into 8ths
  • 185 g Milk, (I use full cream but could use hilo)
  • 20 g Butter

Recipe's preparation

    Filling
  1. Add flour, rosemary, oregano, thyme and parsley to bowl and chop 10sec, speed 9. Set aside.

  2. Add garlic and onion to bowl and chop 5sec speed 5. 

  3. Add butter and cook 4min, 120, speed 1.

  4. Add carrot and chop 5 sec, speed 5.

  5. Add water and stock to bowl. Insert simmer basket and then add mince to basket (roughly break into pieces). Cook 10min, Varoma, Counter-clockwise operation"Counter-clockwise operation"  speed 2.

  6. Use spatula to break up mince then add mince to bowl. Add peas and reserved flour/herb mix. Without MC (place simmering basket ontop instead) Cook 10min, 100, Counter-clockwise operation"Counter-clockwise operation" speed 2.

  7. Set aside in casserole dish, leave lid off dish whilst cooling. Clean bowl and pre-heat oven to 180C.

  8. Add cheddar and parmesan to bowl and grate 10sec, speed 8. Set aside.

  9. Add potatoes and milk to bowl and cook 15min, 100, speed 1. 

  10. Check the potatoes are cooked (mushy) then add butter and mash 10sec, speed 3.5. Scrape down sides of bowl then repeat 10 sec, speed 3.5.

  11. Spread mash on top of mince and sprinkle with reserved grated cheese. Bake in oven until cheese is starting to brown (approx 30mins)

Tip

The mince filling can be prepared in advance (or even frozen then defrosted). Then simply spread the mash on top and bake. The mash will spread easier onto a cold filling.

    I did the mince in the TM bowl, not the steamer, and I added Worcestershire and tomato sauce which is in most other recipes for shepherds pie. I only added the peas right at the end so they didn't overcook. Enjoyed by 3 generations!
