add onion and garlic to bowl and chop 3 seconds speed 7
add oil and saute 3 min, 120 deg, speed 1.
add cumin and cook 2min, 120 deg, speed 1
add vegetable stock concentrate and chicken stock. Insert simmer basket and fill with cut vegetables. Cook 15minutes, Varoma, speed 2.5.
Check vegetables are soft and then tip vegetables into stock below. Puree for 1 minute gradually increasing to speed 9.
Tip
I use mostly pumpkin (japanese pumpkin is best!) and then any other vegetables that I have in the fridge. It is a very thick soup, if you prefer a thinner consistancy add some more chicken stock or water. Serve with toast/bread rolls and a dollop of sour cream!
*If using japanese pumpkin you do not need to peel the skin, just wash thoroughly.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). I wanted to make a bigger batch so used 600ml stock and chucked the veggies straight in without using steam basket. I set the Thermi to Varoma, reverse, speed 1 and cooked it for an extra 8 minutes until the vegetables were soft enough before pureeing as per recipe. This worked well and I will do this again next time. I also added celery in with the onion and garlic as I had it in the fridge and it needed using.
Lovely and so easy to make! But salty for my 11month old but will add sour cream. Have saved and will make again
