Ingredients
- 1 clove garlic
- 1 red onion halved
- 400 g brown rice, soaked for 8 hours or overnight
- 400 g coconut milk
- 500 g water, room temp
- 1000 g Mixed vegetables, chopped, 1 kg mixed frozen veg good
- 400 g chick peas, drained
- 50 g Roasted Cashews
- 50 g Roasted almonds
- 80 g lemon juice
- --- parsley/coriander, few stalks chopped
- 50 g olive oil
- 50 g tamari or soy sauce, tamari is gluten free
- 4 eggs
- 50 g cranberries chopped

I'm cooking this todayRecipe's preparation
if using cranberries and dried apricots place into TM bowl and chop 3 secs speed 5 set aside.
2. Place onion and garlic into tm bowl andchop 3 secs speed 7 . Placethem i varoma dish
3. Place eggs into TM bowl and whisk 5 secs speed 4. Line varoma tray with wet baking paper and pour mix into tray and set aside.
4. Place water andand coconut milk into TM bowl . Place rice into steam basket and rinse under tap. Set in bowl.
5. Place varoma into position with varoma dish filled with frozen or fresh chopped veg. and start cooking 20 mins.
6. Check vegies are cooked. May need a little more depending how much in dish and your taste.
7.when all cookd take omlette and cut into strips. Set aside
8. Put rice and veg and chickpeas into large serving bowl and toss.
9. Mix through tamari and oil and lemon juice top with nuts,egg,coriander and serve hot or cold
