Mushroom Stock
- 2 Large Brown Onions
- 8 cloves garlic
- 400 grams mushrooms
- 100 grams rock salt
- 30 grams oil

Chop everything except the rock salt and oil on speed 6 for 20 seconds
Add rock salt and oil and cook Varoma 20 minutes speed 1
Increase speed slowly to speed 9 for 20 seconds, then store in a jar in the fridge for up to 3 months
Mushroom stock
Tip
You can add the rind of parmesan to the raw vegetables. Pull it out before pulverising as it doesntgrind down smoothly once it has cooked but it adds a lively flavour. This is great in mushroom soup or mushroom rissotto. I have also added up to 100 grams of herbs (parsley, or tarragon).

Sorry it was a little too salty for me... next time I'll reduce the ammount of salt.
Made this today as I scored some discounted mushrooms from local supermarket, it smells so Devine, tastes great too. Can't wait to add it to those winter menus for a bit of zing.
