Ingredients
Chickpeas
- 200 g Chickpeas (Dry)
- 825 g apricots, canned, in natural juices
- 1 brown onion
- 20 g coconut oil
- 3 cloves garlic
- 10 g ginger
- 1 teaspoon cumin ground
- 1 teaspoon coriander ground
- 1/2 teaspoon turmeric ground
- 1 teaspoon Vegetable stock paste
- 1 bunch Leafy greens, Bok choy, silverbeet, spinach etc

1. Soak chickpeas overnight (or at least for a few hours).
2. Saving the juice, drain apricots and set juice and apricots aside.
3. Mince garlic and ginger, speed 6 for 5 seconds.
4. Cut onion into quarters, add to bowl and chop, speed 4 for 5 seconds.
5. Scrape sides, add coconut oil and saute on varoma, speed 2 for 4 minutes, lid off.
6. Avoiding the blade, add cumin, coriander and turmeric and saute on varoma, speed 2 for 2 minutes, lid off.
7. Add apricots and chop, speed 4 for 3 seconds.
8. Drain chickpeas, add to bowl.
9. Add apricot juice and vegetable stock. Cook on 100 degrees, "Counter-clockwise operation" "Gentle stir setting" for 25 minutes, lid on.
10. Chop leafy greens and place in large bowl.
11. Once cooked, pour apricot chickpea mixture over leafy greens, mix to wilt greens.
12. Serve on rice or quinoa.

I found this recipe was nice but a little sparse, i added some capsicum in the cooking process but even with the greens it still seemed to be lacking. I think next time i would also a little of a thickening agent as there was quite a lot of liquid.

This is delicious and makes so much! The sauce is very rich and goes far, so have plenty of rice to go with!
I loved this recipe. I have recently been advised to eat a vegan diet and I the few times I have eaten chickpeas I have not really liked them but I decided to give them another try. Clearly the chickpeas that I have eaten previously have been prepared incorrectly.
There was a lovely flavour to them and they were delicious. I will be including this meal in my meal plans moving forward.
Lovely taste and easy to make. While I ate it as a main meal with rice, the meat eaters in the family had chicken cooked on the BBQ with the Apricot Chickpeas as their sauce so it worked well for everyone. Thank you for the recipe which we'll definitely make again.
