Ingredients

Zucchini Fritters

  • 4 large zucchinis
  • 3 shallots
  • 100 grams Dodoni feta
  • 100 grams kefalograviera cheese
  • 2 eggs
  • 3 tablespoons parsley
  • 3 tablespoons mint
  • 1 tablespoon Dill
  • 1 cup Plain gluten free flour
  • 1 tsp baking powder
  • 2 tsp sea salt flakes
  • pinch cracked pepper
  • olive oil for frying

Recipe's preparation

    1. Chop zucchini in mixing bowl 3 sec/speed 5. Sprinkle with some sea salt. Set aside for 10 minutes then use your hands to squeeze excess liquid from zucchini.
    2. Grate roughly chopped cheese and herbs in bowl 6 sec/speed 7. Add all other ingredients and mix 10 sec/speed 4.
    3. Place mixture in fridge for 30 minutes so fritters are easier to roll.
    4. Remove mixture from fridge. If too runny, add some more flour.
    5. Roll into small patties. Dust patties with extra flour for a crispier coating.
    6. Heat oil in frypan over medium heat. Cook patties for two minutes on each side or until golden. Drain on paper towel.
    7. Serve with tzatziki.

Tip

These fritters are extremely versatile, they can be eaten for breakfast, lunch or dinner. I love making veggie wraps or burgers with them!

    Thanks. Huge hit.

    I didn't have dill, so used Rosemary, worked a treat. Also used Parmesan in place of kefalogrevia.

    Next time, make sure fritters are thickish, add flour to make it so they don't spread when frying. Like the baking suggestion, as the frying did seem to take ages.

    I used a very salty feta and Parmesan and they came out too salty, hopefully when I make some tzaziki to go with them they will be a bit better. I also cooked most of mine in the oven as frying was too hard basket.
