Ingredients
Pasta with Broccolini, Spinach, Mushrooms & Ricotta
- 250 g pasta
- 1 bunch broccolini, cut into 5cm lengths
- 1 tbsp olive oil
- 300 g button mushrooms, sliced
- 1 leek, thickly sliced & cleaned
- 2 clove garlic
- 2 tsp fresh thyme
- 100 g spinach
- 1 tbsp balsamic vinegar
- 100 g ricotta, low-fat

Place 500g water and good pinch salt in Thermomix bowl and cook for 7 minutes at 100ºC on speed 1.
Then add pasta and cook for 8 minutes at 100°C on REVERSE speed soft.
- Add broccolini and cook further 2 mins at 100deg/reverse soft.
- Drain & place in Thermoserver.
- Add leek & garlic to mixing bowl & chop 3 sec/speed 5.
- Add oil & thyme and saute 3mins/120deg/speed 1.
- Add mushrooms & spinach and saute further 3mins/120deg/speed 1.
- Add balsamic vinegar & ricotta and mix 2mins/reverse soft.
- Add to pasta in Thermoserver and mix through with spatula.
- Serve & top with parmesan [optional].
