Parmesan Butter

  • 600 g cream, (not thickened cream)
  • 500 g cold water
  • 100 g Parmesan block, (cut into 2cm cubes)

Recipe's preparation

    Parmesan preparation
  1. Put Parmesan cubes into bowl and blitz on speed 8 for 10 seconds

  2. Take out and set aside

  3. Butter preparation & flavouring completion
  4. Put the butterfly into the Thermie

  5. Pour in the cream

  6. Blitz on speed 4 for about 3 mins (or until fat has separated from liquid)

  7. Remove the butterfly and strain the liquid from the butter, you can even take it out of the bowl and use your hands to squeeze the liquid (buttermilk) out

  8. Add the cold water

  9. Blitz for 10 seconds on speed 4

  10. Strain liquid from butter again

  11. Put butter back into the bowl, add grated Parmesan and blitz on speed 4 for 20 seconds

  12. Serving suggestions
  13. Semi-Slice a fresh loaf of bread (don't cut the slices all the way to the bottom), spread butter inbetween slices and bake in an oven on 180c for 5-10 mins

  14. Mix through pop corn

  15. Serve with crackers & fig paste

  16. Serve soup with a dollop

Tip

You can freeze the buttermilk which can be used in other recipes such as bread
