Ingredients

Sauce

  • 2 cloves garlic
  • 1 onion, large
  • 2 carrots
  • 2 sticks of celery
  • 2 cans Diced Tomatoes (400g)
  • 1 tablespoon tomato paste
  • sprigs fresh basil
  • salt and pepper to season
  • 20g olive oil

Recipe's preparation

    Sauce
  1. Chop the onion and garlic for 7 secs speed 7.

    Add the oil and saute 100 degrees for 2 mins on speed 2.

  2. Add the carrot and celery and chop speed 7 for 7 secs.

    Saute at 100 degrees for 4 mins on speed 2.

    Add the rest of the ingredients (except the seasoning) and cook on Veroma temp for 10 mins on speed 2.

  3. Simmer the sauce by cooking for a further 30 mins at 80 degrees on speed 2.

    Pour into sterilised jars and leave to cool.

    roneld: the water is mixed with the stock paste or you could just use liquid stock instead.

    I really enjoyed this recipe. Lovely basic passata that you can change to your own preference by ading different herbs/chillis etc. I also make it for friends and gave some to our new neighbours as a gift. We had an abundance of fresh tomatoes and so made it, without the tomato paste and added another 10 mins as suggested. Thanks for adding Angela!

    Great tasting Passata. I left out the Basil so it gave more options to use in meals.

    A fantasticly easy and flavoursone passata. I use a garlic olive oil. Add some Mexican spices and herbs (leave basil out) and you have a beautiful tomatoe sauce for the taco's - add fresh red chilli's to your liking.

    If I'm wanting to use frest tomatoes how much would I use & do I do anything else special as I'm new to tmx & have never made sauces before?
