Ingredients
Oriental poached chicken and bok choy soup
- 1 litre of chicken stock
- 1/2 cup of oyster sauce
- 1/2 cup of soy sauce
- 1/2 cup of brown sugar
- 4 spring onions, chopped
- 4 Kaffir lime leaves
- 2 star anise
- 2 cloves of garlic, peeled and sliced
- 3cm of ginger grated
- 2 corriander roots - bruised
- 500 grams of chicken thighs, sliced into strips
- 1 bunch of bok choy, the ends sliced and tops sliced and reserved in thermoserver
- Topping
- one clove of garlic
- 1.5cm piece of ginger
- 1 chilli, seeded

- Prepare topping --- put garlic, ginger and chilli into bowl and chop 5 seconds speed 5 - scrape out into a bowl and set aside
Soup
Add stock, sauces, sugar, lime leaves, star anise, garlic, ginger and corriander in the bowl and cook 8 mins, 100 deg, speed 1
Add chicken and cook 9 mins, 100deg, reverse, spoon
Add the thicker ends of the bok choy and cook 3 mins, 100 deg, reverse, spoon
Pour this soup over the leaves of the bok choy in the thermoserver and rest for 5 mins
Serve into bowls and sprinkle the top of the soup with the topping
As you serve you will see the star anise and kaffir lime leaves and just pop them aside

This is seriously the nicest soup I have tasted in years. I did not change the recipe at all even though normally I turn my nose up at coriander.
Yummo. Great Asian flavours. Left out chilli as kids are a bit spice phobic. Hubby says best soup I've made in the thermo (huge compliment given most of my cooking is 'ok' 😂) Added egg vermicelli to bulk it up for the kids. I think it would make a great broth for wonton soup as well. Thankyou!

This is amazing. The chicken is smooth and delicious, the soup and greens tasty and crunchy
