I'm cooking this todayRecipe's preparation
1. Place chopped sweet potato into "Closed lid"
2. Blitz 5 seconds Speed 5
3. Scrape down bowl
4. Add 2 eggs
5. Blitz 10 sec speed 5 then 10 seconds speed 7
6. Spoon into a pan greased with EVOO and butter and cook. Over a low heat

This recipe by itself is nice, but it's not an amazing resturant meal. It's fantastic for when you want protein for breaky but are over whole eggs/bacon/vege combo
I like mine just with salt on top. My 2yo and 6mo like them with butter. Why not try with avocado spread over the top, or for a more decadent treat bacon and maple syrup. (Hehe)
Fabulous breaky-on-thego, and leftovers are a nice snack.
i prefer this with purple sweet potatoes (white fleshed)

ecorbetto: Hi Did you ever work out a weight for these? I also have many vairied sizes of sweet potato!!
When you say 3/4 of a sweet potato, what weight would you recommend? My fruit store stocks extremely large sweet potatoes so I'm assuming 3/4 of them would be too much.
Would this recipe still work with Organ No eggs egg replacer?
I really want this to work but it'd falling apart. I want to give it to my 1yo as finger food - he is GF DF. Any tips?
Cannot wait to try this! We are on GAPS at the moment so cannot have sweet tatoes but this looks good. Would be nice with cinnamon sugar and maple syrup...

Turned out well thanks! Kids didn't like the colour (only had orange kumara) but I added a pinch of cumin and they said the flavour was good. Next time will try with purple kumara!
