Ingredients
Chicken, Cheese and Vegemite Scrolls.
- 4 sheets ready rolled puff pastry
- 500 g chicken mince
- 1 onion, Quartered
- 1 carrot, Roughly chopped
- 30 g Vegemite®
- 70 g Tasty cheese, Cut into cubes
- 1 Chicken Stock Cube, Or equivalent stock paste.

- Place cheese into bowl. With lid and MC in place, grate cheese 5 seconds, speed 8. Set aside for later.
- Place onion, garlic cloves, carrot and Vegemite into bowl. Place lid and MC onto bowl and chop, 5 seconds, speed 5. Use spatula to scrape down bowl.
- Add chicken stock cube, crumbled, chicken breast mince and cheese into bowl. Mix 5 seconds, "Counter-clockwise operation" 5. Scrape down bowl with spatula and repeat if mixture is not thoroughly mixed.
- Divide pastry mixture between 4 sheets of puff pasty. (If you want to make larger scrolls, only use 3 sheets).
- Using spatula, spread mixture evenly over pastry, leaving a approximately 1cm edge of pastry without mixture.
- Starting from the side OPPOSITE the free edge, roll up like a Swiss roll. Slightly dampen free edge so that pasty sticks together.
- Place 'logs' in freezer for a few minutes to firm up before slicing to desired thickness.
- Place on lined oven tray and cook at 180 degrees Celsius for approximately 30-35 minutes or until until golden.

Tip
These can be made ahead and frozen as pastry 'logs'. Pull out of freezer to defrost slightly before slicing to desired thickness and baking.
Thicker scrolls are great for a meal, and thinner ones are great for snacks.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
