Ingredients
PUDDING
- 200 grams dates, pitted
- 1 teaspoon bi-carb.soda
- 320 grams Boiling water
- 80 grams Butter or Margarine
- 150 grams brown sugar
- 300 grams self-raising flour
- 1/2 teaspoon cinnamon
- 2 eggs, x-large (59g each)
- 1 teaspoon Vanilla Essence/Extract
- 100 grams dark choc chips
CARAMEL SAUCE
- 100 grams golden syrup
- 160 grams brown sugar
- 100 grams Butter or Margarine
- 200 grams cream
- 1 teaspoon Vanilla Essence/Extract
- 100 grams white chocolate melts

Add dates, bi-carb and boiling water in TM bowl and let stand 5 -10 mins. Meanwhile line and grease a large square cake tin and pre-heat oven to 180 degrees.
Add sugar/butter and combine approx 10 secs/speed 6-7.
Scrape down bowl add flour, cinnamon, eggs and vanilla and combine 10 secs/ speed 5. Scrape down bowl and repeat if neccesary.
Add choc chips and combine for 5-10 secs/sp1/"Counter-clockwise operation" until well incorporated into mix. Place into tin and bake for approx 50 mins (will depend on the size of your tin). Pudding is done when a skewer comes away relatively clean.
Rinse TM bowl. Add all sauce ingredients and melt together for 1-2 mins/speed 1/80 degrees.
increase speed to speed 3-4 and cook 3 mins. Sauce will thicken upon standing.
