Ingredients
Frittata
- 70 grams parmesan cubed
- 10 grams pine nuts
- 5 grams parsley
- 1 clove garlic
- 1 red onion, quartered
- 10 grams coconut oil
- 15 grams Rapadura
- 20 grams balsamic vinegar
- 6 eggs
- 250 grams ricotta cheese
- 180 grams feta or haloumi

1. Grate Parmesan 10 sec, speed 9. Preheat oven to 180.
2. Toast pine nuts 5 mins, "Counter-clockwise operation" , "Gentle stir setting" , 100 degrees with mc off. Set aside.
3. Chop spinach and parsley 5 sec, speed 8. Put in bowl with pine nuts.
4. Chop onions and garlic, 4 sec, speed 7. Add coconut oil and cook 3 min, 100 degrees, speed 1. Add rapadura and balsamic and cook for further 10 mins, 100 degrees,"Gentle stir setting" .
5. In a separate bowl, mix eggs.
6. Add all ingredients to thermomix and stir, 10 secs, "Counter-clockwise operation" , speed 1.
8. In fry pan heat coconut oil so it covers the bottom. Pour in mixture and cook over moderate heat for about 10 mins or it looks like it is setting.
9. Bake in oven for 15-20 mins
Tip
You can throw anything you like into this, add ham or tomatoes, or grilled capsicum. Serve with homemade tomato relish and salad

Skipped the frypan step and simply baked in oven, so good!
How much spinach?
Tastes great. I used silverbeet & kale. Basil instead of parsley. Reduced sugar to 10g. Used yoghurt instead of ricotta. Baked for 25 mins
This recipe is very sweet. So sweet that my 6yo spat it out and said it tasted very sweet and weird. Having said that, we normally don't use sugar in savoury dishes so we are probably very attuned to it. I thought maybe the rapadura would help give the onion a caramelised sort of flavour, but actually the recipe would be much better and healthier without it, and I would leave it out next time. I will probably make this again though, as I think it would be yummy without the sugar. I used a bunch of spinach, and I used fresh basil instead of parsley.

So i missed adding it to my grocery list and was left short halfway thru the recipe. quite frustrating, but I used a grated zucchini instead.

Full of flavour! I added some roast pumpkin. Also made the shortcrust pastry from the BCB and baked in the oven.

I just want to say that The flavours of the caramelised onion makes this dish unique and a delicious surprise with every mouthful! I cooked this dish specifically to use up the remaining Xmas ham, as an alternative to plain old quiche Lorraine And I was so happy I took the risk! I used cream instead of ricotta, added ham and used less feta. Could have omitted feta while using ham as this made it a little salty, but still delicious! After placing it in the oven for ten minutes, I changed to the griller at 180 and I think next time I will substitute all the oven time for grill. Will make it cooler in the kitchen in the middle of summer, which is a bonus! If you love caramalised onion, you will absolutely love the flavours in this dish. i served it up with edc beetroot salad and edc coleslaw. Healthy and so tasty! Thanks for the recipe!
