Ingredients

Sauce

  • 500 g mince beef, (I like Heart Smart)
  • 60 g Butter, (Or lard or ghee)
  • 1 onion, Quartered
  • 2 cloves garlic
  • 1 heaped tablespoons EDC stock, With 500mL water, or 500mL bone broth
  • 2 tablespoon tomato paste
  • 8 Ripe tomatoes, halved
  • 1 Celery rib, Halved
  • 2 carrots, Peeled and quartered
  • 50 g bacon, Shortcut is best
  • 1C red wine
  • 1 tablespoon fresh oregano
  • 6-9 zucchini, Or Spaghetti of your choice

Recipe's preparation

    Sauce
  1. 1. Add onion, garlic, carrot, celery and bacon and chop 5 sec Speed 5

     

    2. Add butter and cook 5min, 100'C, Speed 1

     

    3. Add beef and oregano and cook 5min, 100'C, Speed 1

     

    4. Pour in wine and cook 5min, 100'C, speed 1, MC removed

     

    5. Add stock, tomato paste and tomatoes and cook for 20-60min (the longer the better). Remove MC for 20mins of the cooking time to reduce bolognaise

     

    6. If sauce too runny just cook for longer without MC on - you cant overcook a bolognase, it just gets better!

  2. "Zoodles" (zucchini spaghetti)

  3. 1. Using a vegetable peeler peel zucchini into fettuchini-width strips

     

    2. In a saucepan heat zoodles with a spoonful f butter until soft (5min)

     

    3. Serve freshly cooked zoodles with bolognase, and if you like dairy, some parmesan

    Reading the other comments, I left the water out altogether and used 400g canned chopped tomatoes instead of the tomatoes. I still added the stock paste and the tomato paste as per the recipe. I reduced the red wine to 1/3 cup. I cooked on reverse.

    At the end I had ~1/3 to 1/2 of the mixture left over, so I added 100g red lentils and 200g water to the left overs and cooked a further 10 minutes on reverse speed 1 100 degrees. Then I used this for a second meal.

    I actually don't even know what to do with this slop.

    I didn't add the water & only a Mc of wine. I cooked it for 60 mins with the Mc off.

    I would not recommend this recipe.

    This sauce had great flavour, but I am so glad I didn't use the water that was in recipe it would have been far to mushy. Will defiantly make again....sooooo yummy

    This has great flavour but the recipe needs changing.1MC red wine, Used NO water. 1tbsp stock. 3 Roma tomatoes and a jar of passata.  Cooked in thermie but then changed over to stove to reduce so that I could cook rice for dinner in thermie.  Froze the Bolognese after it reduced.

    I struggled with the consistency and ended up thickening the sauce in a large saucepan but the flavor was definitely there. It was so tasty, it's on the menu again next week tmrc_emoticons.)

    Although this smells AMAZING, mine has just turned into a sloppy, soupy consistency which I just can't bring myself to eat... Far too much liquid in there and my mince has pretty much disintegrated. Not sure if I will try it again, but if I do, I will be sure to reduce the liquid in the recipe.

    I found all the ingredients above was waaaaaaay too much in the Thermomix!! There was so much liquid that after 1.5 hours of reducing it was still watery. Nice flavor, next time though I will go easy on the liquids!!

    What a lovely smell as you cook this bolognese! I reduced the wine and the stock and found there was still too much liquid so I had to cook it for quite some time to reduce the liquid. I think I'll further reduce the liquid next time. Thank you for sharing this recipe.
