Ingredients

Broth

  • 1800 g water
  • 50 g fish sauce
  • 30 g lime juice, (or lemon)
  • 1 tbsp stock paste (EDC)
  • 1 tbsp brown sugar or rapadura
  • 4 slices fresh ginger 2cm
  • 4 whole star anise

Accompaniments

  • 250 g rick stick noodles, soaked in cold water
  • 250 g chicken raw, thinly sliced
  • 3 spring onions, thinly sliced
  • 200 g bean sprouts
  • 2 Red Chillies, thinly sliced or pinch of flaked chilli to taste
  • 1 bunch corriander leaves, (and or mint) chopped
  • 2 Limes, cut into wedges

Recipe's preparation

    Broth and accompaniments
  1. soak rice noodles in cold or room temp water, if you soak in hot water, be sure to refresh under cool

     

  2. Add water, fish sauce, stock paste, lime juice and brown sugar to the bowl

     

  3. Place basket in place and add ginger and star anise

     

  4. Cook 15 minutes/100degrees/sp 2

     

  5. Remove ginger and star anise from basket and discard

     

  6. Preapare accompaniments

     

  7. Add thinly sliced chicken to basket and cook 2 mins/100degree/sp 2 (ensure chicken in covered with the broth)

     

  8. To serve
  9. Add softened rice noodles, bean sprouts, chilli, spring onion and cooked chicken to bowls

     

  10. Pour over clear broth

     

  11. Garnish with herbs and lime wedge

Tip

Just serve the amount you wish to have for that meal and store left overs seperately to aviod soggy noodle when you reheat. Also keeping accompaninmets fresh.

Add vegetables to taste, either to basket before the chicken step or in the Varoma while the broth is cooking.

    Delicious and so easily adaptable to suit individual tastes. I liked the amount of ginger and star anise, but would add more Lime juice next time. I added a variety of veggies (bok choy, red capsicum, carrot matchsticks and sliced bamboo shoots) to the simmer basket with the chicken, it was so easy to serve the noodles, then chicken and vegetables using tongs, then just pour the broth over the top after carrying the bowls to the table, no fuss, no mess, no waste! Thank you.

    The chicken flavour is nice. But there was waay too much ginger and star anise for our taste. We'd 1/2 it next time and add in more Brown suger.

    Think you'll find the extra ingredients will really improve this recipe's flavour! I had entered many times, and deleted accidentally many times, I have found publish is the only way to permanently save me from the accidental deletes. Let me know what you think! tmrc_emoticons.D
