Ingredients

Apple nut bread

  • Butter, for greasing
  • 750 g apples, cut into quarters
  • 100 g sugar
  • 150 g raisins
  • 500 g flour
  • 1.5 tablespoon baking powder
  • 1 tablespoon cocoa
  • 1 teaspoon ground cinnamon
  • 200 g whole mixed nuts, of choice, (see Tips)

Recipe's preparation

  1. Preheat oven to 180°C. Grease a baking form (approx 30 x 12 x 10 cm) and set aside.

  2. Place apples into mixing bowl and chop 5 sec/speed 5, with aid of spatula. Transfer into a bowl and set aside.

  3. Place sugar, raisins, flour, baking powder, cocoa and cinnamon into mixing bowl and mix 10 sec/speed 3.

  4. Add nuts and reserved chopped apples and knead 3 min/Dough mode"Dough mode" with aid of spatula, if necessary to assist.

  5. Place dough into prepared baking form and bake 60 minutes (180°C).

  6. Cool in baking form for 15 minutes before transferring onto a cooling rack. Cool completely before cutting bread into slices to serve.

Tip

Bread spread with butter is delicious for breakfast or a snack. It stays fresh and moist for several days.

For mixed nuts you can use walnuts, peacan nuts, hazelnuts, almonds or cashew nuts. Add seeds to make a healthy additional (or alternative if you have a nut free household / school)

    Didn't love this recipe. I wasn't sure which flour to use to ended up using SR. It looked nice and smelt amazing but it was too dense and I didn't like the flavour all too much.

    Might try it again and change it up.

    I had the same problem with this bread. The "My Way Of Cooking" cookbook has obvious errors in the recipe. Can anybody say how much baking powder and cocoa should actually be used. Was happy with the end result by just winging it but felt it could have been a bit lighter.

    woops, just noticed that the recipe on this site gives the answer. Will definately be baking it again. Healthy and delicious.

    Oh my god but this is brilliant. I loved it.  I cooked it for about 55 mins (I have a hot woven) in one loaf tin. It is delicious on its own or with a bit of butter. Thanks for the recipe. Big Smile

    Ohhhh yummo! I made this for the first time today and I'm so impressed! I didn't use any sugar either, substituted all the raisins for cranberries and used a combination of whole almonds and pepitas for the nut mix. I also split the mix into two and made 2 lots at an hour each in the oven. I also used SR flour and all my apples were Granny Smiths. I'll be making this a lot now, the kids love it and it's so healthy! Thanks for sharing!

    This is excellent! I took on board the tips from thermojeanie (thank you! they were most helpful) and I ended up with two perfect nutty loaves after about an hour in the oven.  This makes a great healthy snack, freezes well, and lends itself to some simple but effective variations.

    I mixed in cranberries, currants, raisins and inca berries while my nuts were a mixture of walnuts, almonds and salted cashews... Simple, dairy free deliciousness! ...and a good use for any sad looking apples from the bottom of the fruit bowl I might add!

    tmrc_emoticons.(I was disappointed in this recipe as I did it from the "My Way of Cooking Book". I got to the add baking powder part and the ingredients section didn't mention baking powder but had cocoa mentioned twice. Being unsure of the amount to add I only put in  1 teaspoon and my finished cake didn't really rise. Might try it again but annoyed that a book has an error like that!
