  • 600 g cream
  • 395 g condensed milk
  • 70 g pecans or nuts of choice
  • 2 packages malt biscuits

Recipe's preparation

  1. Line a tray with baking paper and cover base by placing biscuits face down (approx one packet depending on size of tray)
  2. Add pecans to bowl and chop speed 4 for 10 seconds (repeat if you prefer a finer consistency). Set aside. Rinse and dry bowl

  3. Insert butterfly, add cream and condensed milk and whip speed 4 until thick (takes approx minute depending on freshness of cream so keep a close eye on it!). Add pecans and gently stir with spatula.

  4. Spread over biscuit base and top with remaining biscuits. Freeze until set firm then cut into pieces.

Tip

You can vary this recipe by adding your favourite icecream toppings (eg marshmellows, choc chips, crushed violet crumble etc). I like to spoon through some caramel sauce from the sticky date pudding recipe in the EDC.

    This didn't work for me, I always beat the cream separately first but thought i would give it a try to beat them together to save time... Epic fail! Have frozen the separated mess i ended up with and will blitz it later to see if we can at least still eat it..

    This is a great simple dessert. I blitzed 2 cherry ripes and added to the mix instead of the nuts
