Ingredients

Christmas Pudding

  • 130 grams Butter
  • 130 grams light brown sugar
  • 2 eggs
  • 500 grams Mixed fruit
  • 60 grams breadcrumbs
  • 160 grams plain flour
  • 1/2 teaspoon bicarb soda
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon
  • 80 grams treacle
  • dash lemon essence
  • 50 grams sherry or port

Recipe's preparation

    Christmas Pudding
  1. Break 60g frozen bread slices up & place in TM bowl. speed 6, 10 secs. Set aside. Rinse bowl.
  2. Place brown sugar in TM bowl, 10 secs, speed 9.

    Add cubed butter, 5 secs, speed 8.

    Insert butterfly, 2mins, speed 3-4.

    Add eggs, 30 secs, speed 3-4.

    Remove butterfly.

    Add dry ingredients & fruit, Reverse, speed 2, 1 min.

    In a seperate bowl, add bicarb soda to the sherry/port to combine, then add to TM bowl with the treacle & lemon essence. Reverse speed 2, 1 min. Use the spatula in the top to help incorporate the ingredients.
  3. Cut open a large oven bag, and place in the rice basket.

    Pour mixture into oven bag, being careful not to overfill the rice basket.

    you may have some mixture left over. Do not overfill.

    Tie oven bag extremely tight, in a pudding shape, with string.

    Dont forget to lick the bowl & spatula!!! YUM!!
  4. Rinse TM bowl (or use your 2nd one!!!)

    Add 1000g water. Insert rice basket, containing the pudding, steam 60mins, 100deg, speed 2.

    Check water level after 60 mins & top up to 1000g. Steam for a further 60mins, 100 deg, speed 2.

    Remove pudding from rice basket & hang from a hook, in a dry place for a few hours. Then wrap a calico pudding cloth around the pudding to decorate. Leave hanging on a hook till Christmas Day.

    To Re-heat on Christmas Day, insert pudding & rice basket into TM. Add 1000g of boiling water & steam for 30mins, 100 deg, speed 2. Or, unwrap pudding and reheat in microwave for 5 mins

    Serve with brandy butter, Brandy custard, fresh berries & cream.

Tip

Ensure oven bag is tied up extremely tight, so that water doesnt get into the pudding.

    This is an awesome recipe. I made 20 small puddings using silicone cupcake moulds and cooked them in the varoma for 30 minutes. Absolutely so simple and delicious. Thanks Thermonats for the excellent recipe.

    I actually went ahead and split this recipe by 3 to make 3 small puddings, they turned out amazing and from the looks would serve 3 - 4 people, 8 done so far 4 more to go Cooking 1

    Love this pudding Nat , made it last year too tmrc_emoticons.) divided the mix into one largish pudding and a smaller gift size one ! Perfect every time - love eating it from the spatula !!!!

    Please do not overfill your simmering basket. You may have a little mixture left over. 

    Alternatively, cook pudding in oven bag only, then wrap in calico for decoration when it's finished cooking.

    Unfortunately this recipe does over cater in weight for your thermo. My blades ended up scratching the bottom of my rice basket. I ended up having to transfer my pudding onto stovetop.
