Ingredients

Chicken Marinade

  • 1 kilo -chicken thighs, (skin on or off)
  • 1 lemon, (zest & juice)
  • 2 tablespoons paprika
  • 2 teaspoons cayenne pepper
  • 2 teaspoon salt
  • 1 teaspoon Garlic powder
  • 1 teaspoon pepper
  • 70 mls Olive Oil

Recipe's preparation

  1. In TM bowl  add lemon peels and grate on Speed 8/ 10 secs.

    Add spices, lemon juice and oil - Mix speed 6 / 5 secs

    Add chicken thighs and coat chicken on REVERSECounter-clockwise operation"Counter-clockwise operation" , Speed 3 for 20 secs. Once chicken is coated let marinade for 2 hours +, or atleast 30 mins in fridge.

    Preheat Oven 215'C

    Place chicken thighs into roasting pan and roast for 30mins.

     

Tip

This is even delicious cold the next day - think left overs!

    I love this marinade,  It's also a big favourite of my husband.  I add small pieces of pumpkin to the roasting pan with the chicken and in the last 10 minutes add halved cherry tomatoes.  In the last 5 minutes I sprinkle over some pine nuts.  I serve on a bed of baby spinach topped with some greek yoghurt.  AMAZING!

    Great tip. It would be great also on wings still, but the spices added to a bit of cornflour, and add an egg wash to make delicious buffalo style wings, but oven baked so its not all deep fried like regular buffalo wings.

    I just served this to my 3 sons and they have attacked like pirahnas. So without even trying it I knew it was going to taste great and it does! Made it without the Cayenne as younger boys not keen on spicy.

    I've made this several times with skinless chicken thighs. My biggest tip would be not to put the chicken in the tmx to coat in the marinade as it cuts it up a bit - just pour it over.

    An even bigger tip is to use it on chicken wings which is what I did last night.. AMAZING!!

    I only add 1 tsp of the cayenne pepper though otherwise its too hot for the kiddies.
