  • 1 medium onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 1 carrot, peeled and roughly chopped
  • 1 Red Capscium, seeded and diced
  • 1 400g tin chickpeas, drained and rinced
  • 1 400g tin of butter beans, drained and rinsed
  • 1 400g tin of corn kernals
  • 2 400g tins of diced tomatoes
  • 25 grams of olive oil
  • 1/2-1/4 teaspoon of chilli flakes, I used a 1/2 teaspoon
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 tablesppon of veg stock
  • 1 tablespoon of tomato paste

Recipe's preparation

  1. Add onion, garlic, carrot to bowl, chop 5 seconds, speed 5,

    Add oil, cook 2 minutes, 100 degrees, speed 1

    Add spices and cook 2 minutes, 100 degrees, speed 1

    Add tomatoes, veg stock, tomato paste and capsicum  cook 20 minutes, 100 degrees, reverse speed 2

    Add beans and corn cook 3 minutes, 100 degrees, reverse, spoon

    Stir and mix softly with spatula and cook a further 1.30 minutes, reverse, spoon

Tip

Serve with garlic bread, crusty rolls, or herb pullapart loaf
