Ingredients

Fritters

  • 1 clove garlic
  • 1 onion, halved
  • 20 g olive oil
  • 1/2 tbsp Vegetable stock paste
  • 250 g Fresh ricotta
  • 2 eggs
  • 50 g spinach
  • olive oil or butter for frying

To Serve

  • 30 g Parmesan cheese
  • Green salad
  • a drizzle of balsamic vinegar

Recipe's preparation

  1. 1. Add garlic, onion and oil to TMClosed lid"Closed lid" and chop - 3 seconds/speed 6. Then saute - 3 min/120 deg/speed 2

    2. Add remaining ingredients and combine - Counter-clockwise operation"Counter-clockwise operation" 10 seconds/speed 4

    3. Heat some oil or butter on a large non-stick frypan and drop in tablespoonfuls of mixture. Allow to brown for 5-7 minutes on each side.

    4. Serve with a green salad, some parmesan cheese on top and a drizzle of balsamic vinegar if you wish!

Tip

I find a silicone spatula to be best at getting under the fritters to flip them. Try not to flip too soon or the WILL break apart!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     The mixture was too runny to form into patties. I had to add some cornflour to thicken it up enough to cook in the frypan.

    I served with balsamic dressing and parmesan. Tastes great! Easy to take to work for lunch.
