Ingredients

Mushrooms

  • 6 Portobello Mushrooms (10cm Diameter)
  • 60 grams Spinach Leaves
  • 60 grams Semi-Sundried Tomaotes
  • 35 grams Grated Parmesan Cheese
  • 90 grams Caramelised Onion & Porcini Butter (My recipe), (Or butter)
  • 3 cloves garlic
  • 2 tablespoons Mixed Herbs (Thyme, Sage, Oregano, Basil)
  • 3 teaspoons balsamic vinegar
  • 30 grams pinenuts
  • 6 tablespoons Panko Breadcrumbs (Optional)

Extras

  • 1 Parsnip, Cut thinly using a vegetable Peeler
  • 1/2 teaspoon salt
  • 2 teaspoons olive oil
  • green beans

Recipe's preparation

    Mushroom Preparation
  1. Pull the stalks out gently from the centre of the mushroom and put aside.

    Put the mushrooms onto the varoma trays so they sit flat.

    Into the TM bowl put Spinach Leaves, Semi-Sundried Tomatoes, Parmesan Cheese, Butter, Garlic, Herbs, Vinegar, Stalks of mushrooms.

    Blend 4 sec/Spd 4.

    Scrape Sides of bowl.

    Add Pine nuts. Mix 10 sec/spd 2.

    Stuff mushrooms with the mixture.

    Add 600g water to the TM bowl.

    Cook 20 minutes/Varoma/Spd 4.

  2. Parsnip Chips
  3. Toss the parsnip in the olive oil and salt and put in a 160C oven for 20-30 minutes until crisp.

     

  4. Adding the Green Beans
  5. 10. Scatter the green beans over the bottom tray (and mushrooms) of the varoma.

    11. Cook 10 mins/Varoma/Spd 4.

     

  6. Topping the Mushrooms (Optional)
  7. 12. Remove the mushrooms from the Varoma Tray and place them on a baking tray lined with baking paper.

    13. Put 1 tbs panko crumbs onto each mushroom.

    14. Place under the griller for a couple of minutes to crisp the crumbs.

Tip

This will serve 3 adults as a main or 6 as an entree.

    Yum! I prepped everything in the thermo and then baked in the oven for 20min at 200 degrees. Never made stuffed mushrooms before but I think this recipe may become a regular. Smile I used 1/2 butter and 1/2 cream cheese.

    I found the mushrooms a bit soggy in the varoma so I put them in the oven for a bit and they were great.  Actually better the next day as the flavours developed!

    Very easy to make and super tasty. Next time I will substitute the butter with some cream cheese.

    Lovely flavour & actually easy to make. I used flaked almonds instead of pine nuts as they weren't listed in the ingredient list when I read the recipe & added ingredients to my shopping list. I had the almonds in the pantry. Still good though.

    Am I missing something here. In the method it says add pine nuts but they are not on the ingredience list???
