Ingredients
Chicken, pumpkin, basil pesto risotto
- 350 g butternut pumpkin, Peeled, diced 3cm cubes
- 1 --- onion, Halved
- 3 clove garlic, Peeled
- 50 g Butter
- 50 g white wine
- 2 level tbsp Vegetable stock paste
- 800 grams water
- 500 g chicken breast, Diced
- 100 g Fresh Baby Spinach
- 350 g arborio rice
- 100 g Parmesan cheese
- 2 level tbsp Basil Pesto
- to taste salt
- to taste pepper, ground

- Place Parmesan cheese in bowl and Grate 10sec/Sp9.
Place in a bowl to the side.
In a jug, add 800g of water and mix in 2 TBLSP of stock paste.
Place pumpkin and 100g of mixed stock in bowl
Cook 10mins/reverse/100deg/speed 1
Place in thermoserver to keep warm.
Clean and dry mixing bowl.
Place garlic and onion in bowl and Chop 5sec/sp5
Scrape sides of bowl
Add butter and Sauté 2mins/100deg/Sp1
Add rice and wine to bowl and Saute 2mins/100deg/reverse/sp slow
Add remaining water, stock, chicken, pesto, salt and pepper to bowl and Cook 14mins/100deg/reverse/Sp1.5 with simmering basket on lid in place of measuring cup.
Add reserved Parmesan and spinach to bowl and cook 2mins/100deg/reverse/sp1.5
Place in thermoserver with served pumpkin and stir through with spatula.
Let stand for 10 mins, serve and enjoy
Tip
If you don’t have a Thermo server leave in your TM bowl with lid on for 10 mins.
