Ingredients

Chunky chicken and mixed bean soup low GI

  • 25 grams of olive oil
  • 400 grams of chicken thighs, diced into 2-3cm cubes
  • 2 Rashers of Bacon, fat removed and roughly sliced
  • 1 onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 2 carrots, roughly chopped
  • 2-3 celery sticks (2 if large), roughly chopped
  • 1/2 level teaspoon of dried thyme
  • 1/2 level teaspoon of dried sage
  • 1 bay leaf fresh or dried
  • 1 heaped tablespoon of veg or chicken stock
  • 500 grams of water
  • 1 400 gram of cannellini beans, rinsed
  • 1 400 gram tin of kidney beans, rinsed
  • 1 handful of chopped parsley

Recipe's preparation

  1. Add onion and garlic to bowl - chop 6 seconds, speed 5

    Add bacon, carrots, celery - chop 6 seconds, speed 4 - scrape down bowl

    Add oil and spices - cook 2minutes, 100deg, reverse, spoon

    Add stock, water - cook 15 minutes, 100 deg, reverse, spoon

    Add chicken cook 12 minutes, 100 deg, reverse, spoon

    Add beans cook 5 minutes, 100deg, reverse, spoon

    Stir through parsley with your spatula and serve

    Looked exactly like the picture. Simple flavour, used cooked chicken instead of thighs so got a bit pulverised. Would be great for a winters night, hearty. Forgot the parsley but it didn't matter.

    Great soup! Made it two weeks in a row now. I add 1/2 tsp of chilli flakes and I add one extra carrot and one extra celery stick but keep them chunkier slices rather than chop them.
